Whole foods, plant-based eating includes wonderfully healthy, colorful delicious food including whole grains, vegetables, fruits, beans, legumes, nuts and seeds. Plant-based is a diet free from dairy, meat and oil. We also embrace watching our sodium, fat and sugar intake. And many of us even manage to exercise regularly.

The numbers don't lie!
There are a myriad of web site with health statistics - illustrating the extent of the North American health crisis. I am not going to repeat the obesity and other food borne disease statistics here, I would venture to guess that you are already aware, that's why you're here. If you wish to refresh your memory, here are some of the facts presented by the Centers for Disease Control and Prevention.

Plant-based foods include whole grains, vegetables, fruits, beans, legumes, nuts and seeds.

The numbers don't lie!
In the first study of thousands of vegans in the Journal of American Diabetics Assoc. as reported by, it was shown that plant-based (vegans), on average, were the only healthy weight group in North America with a BMI (Body Mass Index) of 23.6. On the other end of the spectrum, meat eaters have the unhealthiest BMI of 28.8 and are 40 pounds heavier than vegans.

So how about my numbers? I had been physically active and had a healthy weight most of my adult life. But the middle age spread and poor health crept up on me - before I knew it I had taken medication for hypertension for ten years, my glucose numbers were borderline and cholesterol numbers were climbing. My husband Tom and I got serious about pumping up our physical activity, we joined a gym and started to modify our diets.

Then for the last leg of the journey, we joined the ENGINE 2 challenge which came to our little corner of the world, Mercersburg PA. My physician Dr. Liz Geoge spearheaded the effort to make rural America healthy by inviting Rip Esselstyn, author of ENGINE 2 DIET and graduate of Mercersburg Academy, to our Healthy Eating Adventure 28-day kickoff challenge...and the rest is history!! My numbers don't lie - I no longer take meds and am what I consider my fighting weight, that is, the same as when I was a college-freshman!! And Tom is right there with me, no more meds and a 50 pound weight loss! WE...GOT HEALTH!!
